Sweet potato

In Latin America the sweet potato is called batata. It is an edible root vegetable, rich in starch and as the name suggests, with a sweet tasting flesh. The popularity of the sweet potato is growing in the West, and it is used as an ingredient in many diets. We market two types of sweet potato: with orange flesh and white flesh. Peeled sweet potatoes are prepared fried, boiled, mashed, grilled, baked, and deep fried.
